Do you know how to make Pepper oil?

I’m planning to make pepper oil this weekend. Basically I’m planning to sterilize the jar and wash the fresh peppers (jalapeno, hot chillis). I’ll slice the peppers and mix everything with olive oil. Do I need anything else? Do I need to keep this jar refrigerated?

your talking about making an infusion – Chili oil. do all that you do above but I would bruise the chilli’s not slice them and then leave the jar of oil sealed in the cupboard, chilling this sort of thing doesn’t help it infuse. If you want to slice the chilli’s then scrap out the seeds and bruise them in a mortar and pestle and add those to the jar as well – that will give you a rather hot oil.
